Creativity and reinvention are the hallmarks of great pastry chefs. Moving beyond standard recipes, they harness their culinary imaginations to create delectable pastries. In this WSQ certified Advanced Pastry Preparation course, learn to transform ingredients into an assortment of confectioneries and desserts such as luxurious chocolates, deconstructed tiramisu and salted caramel brittle. Delve deep into the details and techniques of sophisticated cake decorations, creating visual appeal through the use of symmetry and asymmetry, colour and visual flow. Sharpen your culinary craft and become an artisanal pastry chef.

  • At the end of the course learners are expected to be able to:
  • 1. Fabricate chocolate artistry in accordance with the industrial standards
  • 2. Design contemporary desserts in accordance with the industrial standards
  • 3. Prepare advanced cakes in accordance with the industrial standards
  • 4. Prepare advanced confectioneries in accordance with the industrial standards
  • Age: 21 years old and above
  • Education Level: Primary education
  • Workplace Literacy & Numeracy Level: At least Level 2 (listening/speaking and reading/writing)
  • Have attained competency in Intermediate Pastry Preparation course (Level 3 or equivalent) or have experience in preparing intermediate pastry products
  • The course fee is S$1501.20 (incl 8% GST) per participant.
  • To help companies and individuals offset the cost of training, SSG will provide funding for the course fee (eligible Singaporeans, PRs or LTVP+ holders only).
  • INDIVIDUALS - Up to 70% course fee
  • SME - Up to 70% course fee
  • NON-SME- Up to 50% course fee
  • Assessment will be conduct via Written Assessment and Practical Performance Assessment.
  • Trainer : Trainee Ratio - 1 : 20
  • Lectures, Group Discussions, Hands-on Practical, Trainer-led Demonstration
  • Full Refund will be made if the course is cancelled due to lack of participants or unforeseen circumstances.
  • Any cancellations made after closing date (14 days to course date) – No Refund
  • Any cancellations made before closing date (14 days to course date) – Full Refund
