On completion of this unit, learners will acquire the knowledge and abilities in preparing intermediate level pastry products that require some level of attention to details and complexity in techniques. This includes both the specialised and soft skills for them to perform their job roles effectively and efficiently, as well as adapt to evolving industry with the changing trends and appetites of Singapore consumers. These skills have also been carefully selected to promote the development or enhancement of horizontal skills for mobility within the industry.

  • At the end of the course learners are expected to be able to:
  • 1. Understand the soft skills to become an outstanding pastry cook,
  • 2. Prepare macaroons in accordance with the industrial standard,
  • 3. Prepare basic entremets and tarts in accordance with the industrial standard,
  • 4. Develop ice cream recipes in accordance with the industrial standard,
  • 5. Make hot and cold desserts in accordance with the industrial standard,
  • 6. Make puff pastry products in accordance with the industrial standard &
  • 7. Make yeast-raised pastries in accordance with the industrial standard.
  • Age 21 and above
  • Education level: Primary education
  • Learners have attained competency in Basic Pastry Preparation (Level 2) or have experience in preparing basic pastry products
  • Workplace Literacy & Numeracy level: At least level 2 (listening/ speaking and reading/writing)
  • The course fee is S$2300.50 (incl 7% GST) per participant.
  • To help companies and individuals offset the cost of training, SSG will provide funding for the course fee (eligible Singaporeans, PRs or LTVP+ holders only) and absentee payroll. INDIVIDUALS - Up to 70% course fee
  • SME - Up to 70% course fee
  • NON-SME- Up to 50% course fee
  • Assessment will be conduct via Written Assessment and Practical Performance.
  • Trainer-Trainee Ratio - 1:20
  • Lectures, Group Discussions, Hands-on Practical, Trainer-led Demonstration , Asynchronous E-learning
  • Full Refund will be made if the course is cancelled due to lack of participants or unforeseen circumstances.
  • Any cancellations made after closing date (14 days to course date) – No Refund
  • Any cancellations made before closing date (14 days to course date) – Full Refund
  • Ascendo Academy reserves the right to cancel, reschedule the course, amend course content if necessary.
